For dinner we made some salmon fish cakes. They were very tasty and a great way to enjoy your salmon. Salmon is great for you because of its oily, omega 3 rich qualities, that is if you have wild salmon. You should only ever buy wild fish, as an alternative to farmed as they may have come into contact with some nasty chemicals.
Anyway back to the fish cakes. They were pretty easy to make…just leave some time as you have to chill your mixture before cooking.
First, place 800g of salmon, chopped, 1 red chilli, 2 spring onions, 1 red onion, a juice of half a lemon, an egg, a piece of fresh ginger and a handful of coriander leaves into a food processor and blitz, leaving a little texture.
Then divide the mixture in little cakes…you actually get quite a lot out of this so we halfed the lot and there was plenty for the three of us…and transfer to a plate and chill for 30min plus. Don’t forget this, as we often do, and end up having dinner a hour late!!!
Sauté in a pan for 2-3minutes on each side and enjoy.
We actually had salmon for dinner yesterday as well and this is a great way to cook it that doesn’t make it feel repetitive!
