Another one of our vegetarian Riverford meals, only I went out to our local fishmonger to by some fresh, wild filleted salmon, which we absolutely love. Nowadays, we tend to just fry our salmon in a little butter and some salt and pepper, I know this isn’t the best way to do it but as this meal was done by just me and Dad we went for the easier option, I hope you excuse us.
As for the paella it was delicious, it contained a collection of peppers, tomatoes, onion and garlic, sprinkled with paprika, salt and pepper, saffron, sugar snaps and some fresh parsley, with a sauce made from vegetable stock and lemon mixed with the veg and some paella rice. In the recipe the dish was served with 3 hard boiled eggs but we substituted these for our fish for a change of taste.
There is something about these fresh and wholesome recipes that really makes you feel good. They are so packed full of vegetables that you are eating well over you five a day all in one meal.
