Veg and Halloumi pasta

I am very proud of what me and Dad produced for dinner last night. It was very tasty, considering Dad had to get the veg last minute as the Riverford order doesn’t come until Monday.

In all fairness we didn’t do a lot of cooking…but Mum still has all our cookbooks in France with her!  

We fried up some new potatoes, red onion, peppers and onions in a pan with some butter. Once cooked…only slightly, we added some blended tomatoes and garlic for sauce and some cooked pasta. Once all combined put in the halloumi, for a minute tops and mix it in in order to warm but not cook and melt it.

Voilà, our easy make-do dinner!
