Chickpea flour and herb flatbread

We went out to a barbeque yesterday and spent the day cooking to prepare. Our first item was this bread. Its very simple to make, just containing 250g of chickpea flour, 4tbsp of olive oil (extra virgin of course), some salt and pepper and some herbs to garnish. Simple.

Now this part of the recipe we didn’t pay enough attention to. After you whisk the flour with 900ml of cold water you need to set aside the mixture for 3 HOURS, though ours only had 2 and it wasn’t the end of the world. Give it a quick stir and add the herbs before putting in a 180 pre-heated oven for 40 min, it needs to be quite thin.

Once golden brown, remove from the oven and leave to cool for 5 minutes before slicing. The flatbread is best served with something rather than alone, for example it was lovely with our gluten-free chicken sausages.
