Ok so we made some more banana bread and this second batch is much tastier than the first!
So I will start by going through the deviations from the previous recipe (I’m sorry these aren’t precise we aren’t people that for measure exactly in the kitchen). First we dealt with the texture, previously it was a bit too bread like, so instead of maple syrup we added more fresh honey, to make it sweeter and softer! We also used pre-ground almonds…rather than grinding our own, which helped give it a more cakey texture. Finally, here is the good part, we added some cacao nibs (roasted cacao beans), using the sort of ratio you would add chocolate chips to a cookie mix. This adds more flavour to the cake while actually being pretty good for you!
