Can’t get enough of posts this evening. Now I thought I had already done banana bread but I guess not!!
This recipe is from the good old Hemsley and Hemsley book where it all began. Now we have made this recipe several times now and it is really a banana bread that you serve with butter and spread rather than a cake. The recipe uses 3 ripe bananas, 30g of room temp. butter (works just as well with something non-dairy), 2tbsp of maple syrup (we generally use honey) – this can be adjusted. A bit of ground cinnamon and vanilla extract. Use 3 large eggs and combine everything with the mashed bananas and butter and whisk. Finally, add 220g of ground almonds and 30g of ground flaxseed (linseed) and mix well. Add all to a tin and bake for just an hour….voila and enjoy!!!
