Stuffed Aubergine

Very tasty stuffed aubergine and peppers. To make,take aubergines…scoop out the some of the insides and then cook for 30min. We stuffed ours with red camargue and wild rice (purchased at waitrose), garlic, mushrooms and onion. Then return to the oven for another 10 or so minutes…depending on your filling. A very tasty way to get your five-a-day and boost your vitamin level without spending ages doing shopping and prep. Feel free to use whatever veg is left at the bottom of the fridge…I’m sure they would taste as good!!!
