Cougette, Pepper and Halloumi kebabs

So that is what we had yesterday for tea. It was pretty simple to make as everything came provided in the Riverfords Veggie recipe book.To start with the simple it was all served on a bed of couscous (with lemon juice and almonds (you need to toast the almonds first)) with a homemade soya yogurt and mint dip. To replace the couscous with an alternative then quinoa is great. The aim was to make kebabs with pepper, halloumi (check it doesn’t contain cows milk in any forms) and courgette, we didn’t actually put together the kebab as we didn’t have the sticks. I think it was actually nicest this way. We also had carrot chips with sesame seeds as a side. The start of our no meat week! and it doesn’t actually feel that bad! It was a great day of getting five a day and fuelling my now filled college daysIMG_2154
